Fall means Halloween and Halloween means It’s the Great Pumpkin, Charlie Brown! If you’re expecting a visit from The Great Pumpkin in your pumpkin patch, whip up a batch of these delicious pumpkin muffins to snack on as you wait!
Ingredients:
- 1 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 cup pumpkin purée
- 3 tsp vanilla
- 1/2 cup canola oil
- 1 1/2 cup flour
- 1 tsp baking powder
- 1 tsp baking soda
- 3 tsp pumpkin pie spice
- 1/2 tsp salt
- 4 tbsp cinnamon sugar
Instructions:
- Preheat oven to 350 and prepare a muffin pan with cooking spray or butter and flour.
- In a medium bowl, whisk together sugars, eggs, pumpkin, vanilla, and oil.
- In the same bowl sift flour, baking powder, baking soda, pumpkin pie spice, and salt right on top. Gently fold in until completely wet. Do not over stir.
- Fill muffin tins evenly to the top. Using a spoon, pour cinnamon sugar on top of each one. Using a knife or toothpick, swirl the tops of each one.
- Bake for 19 minutes, removing them when they are just slightly underdone. (That’s what makes them great) Allow to cool and enjoy!
