This Valentine’s Day, the kids can make these Queen of Hearts inspired Strawberry Tarts! They’re simple and delicious!
Ingredients:
- 1 premade pie crust (store bought or see recipe below)
- 4 oz cream cheese
- 4 oz whipped cream
- 1/3 cup powdered sugar
- 10 sliced fresh strawberries
- 3 tbsp apricot jam
Instructions:
- Roll out pie crust and cut, using a biscuit cutter or a regular kitchen glass, into 10 circles. Place tiny crusts into muffin pan.
- Using heart shaped cookie cutter, cut remaining dough into heart shapes and lay on cookie sheet. Bake all at 350 for 10 minutes.
- Using a hand mixer, beat together cream cheese, whipped cream, and powdered sugar. Set aside.
- In a separate bowl, mix together sliced strawberries and apricot jam.
- Once pie crusts have cooled, take them out of the muffin pan and fill with cheesecake filling and top with strawberries and crust hearts. Enjoy!
Pie crust recipe:
Ingredients
- 1¼ cup all-purpose flour
- ½ cup cold butter (1 stick – cut into cubes)
- ½ tsp granulated sugar
- ¼ tsp salt
- ¼ cup ice water
Instructions

Combine flour, butter, sugar, and salt in a large bowl.

Using a pastry cutter, start working the butter into the dry ingredients until it looks like crumbles. (You can also use 2 butter knives & cross them through the ingredients to combine.)

Once you have reached a crumbly texture add the water.

Work it together with your hands pressing & lightly kneading it together until you have a moist ball of dough that holds together well.

Place the dough on a well-floured surface.

Flour your rolling pin & start working from the center pushing outward in all directions.
