Pop Culture Kitchen: Tiana’s Palace’s Famous Gumbo

 

Enjoy an authentic New Orleans recipe straight from princess Tiana’s recipe book! (Or so I’d like to imagine.)

 

Ingredients

  • 3 ounces boneless, skinless chicken breasts (cut into 1/2″ strips)
  • 2 tablespoons canola oil
  • 1/2 cup all-purpose flour
  • 4 cups chicken broth
  • 6 plum tomatoes chopped
  • 1 1/2 cups okra cut into 1/2 ” pieces
  • 1 chopped green bell pepper
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 2 cups chopped andouille sausage
  • one bag of small shrimp
  • 5 cups water
  • 1 teaspoon hot pepper sauce
  • 1 teaspoon black pepper
  • 1 teaspoon cajun seasoning
  • 1 teaspoon parsley
  • 4 cups of prepared white rice.

Instructions

  1. Dredge the chicken pieces in flour and brown them in the pot with oil. This may have to be done in several batches.
  2. Pour the chicken broth over the browned chicken and bring to a boil.
  3. In a separate pan, sauté vegetables in oil until softened and add to pot.
  4. Add all remaining ingredients and simmer for 30 minutes.
  5. Taste and season before serving.
  6. Serve over prepared white rice.
